It's called latency. I thought Macs were supposed to have inherently low latency. You might find something in sound settings in your sequencer that allows you to change the buffer settings to reduce latency during recording. Other than that, I'm not really sure what to suggest. A firewire/USB audio interface might help to get latency down to a manageable level... the same, as an alternative might offer direct monitoring - that bypasses your computer while you record allowing you to hear back immediately what is getting captured without any processing.
