Default Mono Playback Not Working?

I recently recorded a few simple tracks on Cubase LE4, just guitar and voice through a microphone (plugged into a tascam audio interface). I recorded them as stereo tracks, because everytime i create a mono track it does not record. Because of this, the playback only comes out of the left side of my headphones. Maybe its possible for me to record a stereo track and set it to which earphone to come out of? Can someone please solve this problem for me?

Also, would I be able to transfer said stereo tracks ONTO mono tracks so my original recordings can come out of both headphones? Thank you in advance, greatly appreciated!

You need to record in mono so let's fix that instead of trying to unstereoize.

I think you have not set up your input channels in Cubase or you did not select the correct one when creating a new track.
You didn't say which Tascam you have but let's assume you have two inputs. In Cubase >Devices>VST Connnections (F4) you should create two mono tracks, MONO 1 and MONO 2. Sometimes you might actually have a stereo source to record so also create a channel called STEREO 1-2.

Now when you open a new mono track make sure you select the correct input for that channel. Press the monitor button on the track, play a note or yell in mic and look for activity on the track meter. If there is none then slect the other mono input channel for that track.

NOw if you are recording a true stereo sourcelike say a drum machine, hook up one drum machine output to input 1 and the other to input 2 of the tascam and create a new STEREO track in CUbase. Then you will get sound from each input channel.
