For stuff that doesn't use MIDI (which is virtually everything I record at work) I use ProTools HD on a G5 (and often mix on my Powerbook which runs PTLE). I like Pro-Tools, but if I was paying for the software/hardware out of my pocket, it wouldn't be what I'd be using. Digi gouge you for everything, as does one of the most popular plugin suppliers (Waves) and in many ways, its very inflexible. I hate that half of my plugins can't be applied in real time.
For stuff that does use MIDI I use Cubase SX on a P4 PC. I got frustrated with Cubase on my Powerbook - my favourite (free) plugins and VSTi's are not available on the Apple platform, and I also found some performance issues on my Powerbook.
At home, where most of my MIDI stuff and composition gets done, I use Cubase 5 on my PC laptop which works well as long as I don't try too many VST instruments... my laptop is severely underpowered (its quite old) but does run MIDI stuff smoothly and gives me 16 tracks of audio with as many effects as I need before it starts giving me problems. I usually run submixes in different arrangements to get over any track limitation problems. It's a fine tool for composition.
We have Digitial Performer here which I can't get my head around... okay, I haven't used it very much, but it certainly doesn't seem intuitive to me like Cubase does. I've used trials of Sonar which I also didn't like. I've never used Logic.
