It really depends on what you are trying to record.
If you want to do drums then i wouldnt settle for anything less than 4 simultaneous inputs for recording. Im not saying you can not get a good drum sound with less but it is more difficult to control the sound of the drum set itself. I have never personally had experience with either the interface or the mics but i have heard good things about those mics and i almost bought them myself but i found a different set. But basically it depends on what you are going for. What programs are you using?

Right now just audacity with a one mic running directly into the soundcards line in. I am a drummer actually and I've recorded at my friends with a mic overhead and one mic at the bass drum, but i kno normally drums are mic'd with 4.
But I also have freestylers come over my house and record to an instrumental track that I just throw onto audacity. I would be recording their vox with just one mic.(just made a sampler of it MySpace.com - DJ Reckless Rick - MILFORD, Connecticut - www.myspace.com/djrecklessrick )
