It depends on the software. In Cubase, you click "create new track" and it asks you. I'm not sure about anything else.

There isn't much to be confused about. It goes like this. A stereo track in recording software takes the two incoming signals and hard pans them. A mono track in recording software takes that one single track and allows you to pan it wherever you want.

There have been times where I have recorded a stereo source as two mono tracks so that I would have more panning options.

What brandon is saying if you look at your audio interface you should have the option of recording mono or stereo. Mono meaning 1 source. Stereo meaning 2. If you are pluging in a mic, you are using a mono source. If you want to record it and hear it out of both sides, you need to record it as Mono. Otherwise you are either recording into left or right, hence only comes out one side. I can only use Adobe audition or cool edit pro for an example of how to set this up on each track there is a button it says Rec 1 to start with. you would click on this button and choose Soundcard Left or soundcard Right. this way it will record Mono and come out each side evenly until you pan it to one side or the other durring editting. That is about as simple as I can explain it.

Well, there isn't a mono/stereo "knob" or "switch" on the audio interface. It's more in the recording software itself and which inputs you use to route to a track.

When I said "look at your audio interface", I meant on your software.
Sorry if I made it look like there is a "button" on the interface. It is in the recording software or in your Mixer settings on and off of the computer. If you run through a mixer, you can run stereo into your soundcard. the mixer has panning capabilties on it to enable you to pan the Mono signal left or right or my favorite, Center. Then you will hear the mono signal coming out stereo. This also enables you to be able to do some awesome stereo effects with the software. this is starting to seem complicated to me now! Just try stuff, don't be afraid to mess things up. maybe write down what you did so you can undo each thing.
