Logic would be a good thing to use. Tons of virtual instruments and powerful tools..plus i would get an apogee duet for the interface. Apogee is one of the the industry leaders in converters. This unit has 2 great mic pre's with up to +75 db of gain with monitoring outs plus built in headphone output. Apogee Duet | Sweetwater.com

or if your feeling real rich you could get the open labs miko Open Labs - Products

Do you use a PC or Mac? SEveral good choices for both. I use SONAR on a PC and am very happy. People on Cubase, Pro-tools, and Logic will also tell you they are happy. SONAR is very good at midi and audio. I'm sure some of the others are too.

Oh boy. Another "best" software thing.

Here are the most popular:
Cubase, Logic, Sonar, Pro Tools, Digital Performer, etc.
