I don't see what the issue is, you just disable it in the bios and it won't give you any trouble.

To answer your question, yes, there are a few server class motherboards on the market that dont come with integrated sound and video. The problem is that they are few and far between and being that they are for servers, sometimes tend to be more expensive. As everyone else has said, why go through all the bother when you can just disable it anyway. In fact, you dont even have to install the drivers for it; that way it'll be as if it doesn't exist.

Actually the OP has a valid reason to look for one without - there is a performance drain even when disabled in the OS. I would look for a motherboard that has jumpers to disable the audio instead - if I remember correctly a few companies did. DFI, Epox, Asus would be the first to look at. Don't be afraid to contact their tech. support department!

| My question then would be: is this drain measurable? All the hassle of looking for a mobo without onboards; the extra cost involved... all this for a barely measurable improvement in performance (if any). Would the OP be able to fire up his new machine and say "wow, this pc offers so much more performance than another machine with onboards"? I dont believe so.
