I think what you are asking is how to record the audio coming out of the Korg rather than just using the MIDI info to play virtual instruments. To record Korg sounds as you play the keyboard, just run audio from the line outs of the Korg into a line input on your audio interface, and record that like any other audio track (instead of a MIDI track). If you want to sequence the Korg with MIDI from Protools, just send MIDI info from a MIDI track to the Korg rather than one of the virtual instruments while recording audio as described.

Hook the Triton to the 003 via S/PDIF. That will circumvent all the analog circuitry and conversion processes that are robbing you of your sound quality.
