Issues dubbing additional tracks in Cubase LE

I am new to the forum and to home recording, and I appreciate that this website exists... so thank you Brandon, et.al.
I am having some issues and was hoping for some guidance.
When I lay down a track in Cubase LE and then try to lay down additional (new)tracks from different inputs/ mics/ keyboards, etc. in addition to the new source, the audio from the initial track (1) gets recorded on to the new track as well, making for a muddy/ over modulated unusable "new" track. I obviously want/need to listen to the initial tracks on headphones when recording the new track.
I am using a Peavey 10 USB mixer (with USB port) as my audio interface and have a midi interface into another usb port to do the midi recording/ interfacing. In my present configuration, is there a way to monitor the previously recorded tracks and record a new "clean" track without re-recording the previous tracks and causing this issue?
The only controls for the USB port on the mixer are Tape/ USB/ Ctrl/ HP and
Tape/USB/ To Mix which are both set with a white depressed button (up or down) and the two master faders.
I am sure that this is a rookie mistake and that I am probably just re-sending the previously recorded track down the new "live record" track but for some reason, everything I have tried does not give me the ability to monitor previous recordeed tracks while laying down a new clean track with out this unintentional re-recording of the initial track(s).
