In a typical big boy project, you've got the producer who is generally the guy who insists on specific performances and has a vision for how the album should sound. He usually works with the band on arrangements and has a direct impact on the music himself.
The engineer is more the dude that gets the tones. He's the guy EQing things, compressing things, etc.
The roles often get blurred because most producers can engineer and some engineers are expected to produce a little bit.
