Cool Multiple tracks in Cubase

Hello, My name is Jim and I've been using Cubase for about three years now. I'm still learning and have been only recording one track at a time. My question would be, how do you record two or more tracks? This has me baffled. Any help would be much appreciated. Anway, I'm a guitarist/singer/songwriter and I play a little piano on the side. I am grateful for any and all your help.

I'm using Cubase SX3. I simply create multiple audio tracks, make sure I have the correct input from my audio interface routed to that particular track by clicking on the space just above the channel in the mixer window (among other places).
