I think if you want to record your guitar, then you want to record audio, not midi.

Midi is basically used to control synths. It is information used to tell the synth what notes to play and how to play them. Just a basic idea of it. There is more, but don't worry about that right now.

Unless your guitar is a midi-control device ( it would have a special pick-up if so, I believe ) then you just want to record an audio track.

1) Because it gives you the option of changing sounds later. Instead of sending the performance (which is the what the MIDI data captures) to a piano sound, we can now send it to a violin sample or a synth.

2) Because you have total creative control over editing the performance. You can fix anything and everything from timing to velocities.

Very much so, a violin synth would not sound as good as a real violin, it sounds much more rigid and manufactured. I'm not sure if this is what your asking, but there is a difference between a violin patch and a real violin

Basically MIDI does not transmit an audio signal— it transmits "event messages" such as the pitch and intensity of musical notes to play, control signals for parameters such as volume, vibrato and panning, cues, and clock signals to set the tempo. This MIDI file can then be "fed" (for lack of a better term) to any drum, piano, violin, guitar synth. The synth will then read the "event messages" and play the notes accordingly.

It can get a bit complicated to understand at first but for the purposes of answering your question, no you dont need MIDI if you wanted to record your guitar. In fact you dont ever have to use MIDI and depending on the style of music you play, sometimes never will.
I dont know if Ive helped you or just made it more confusing
