+1 That's what I'd do.
Since you're going into the mixer, 58 on input 1 panned left, condenser on input 2 panned right. Keep the faders on the mixer at 0 (unity gain) on the two channels in use. adjust the mic gain to get your desired recording level in your software.
2 mono tracks in your software, input 1 and input 2.
Aim for about -6dB peak level for each track.
I'd probably add a bit of reverb to the condenser mic when mixing.
