EV-RE20 Behringer Xenyx 502 Phantom Power = no Trim/Gain Knob = no
Looks like you can't boost your mic signal with this mixing board. This would be the first problem I would see with any microphone, to get the power and sensitivity it needs.
I have a similar setup with my SHURE SM58 setup, but my board has a trim knob that can preamp it somewhat...
before I send it to my audio interface...
Creative Soundblaster Live!
Which you could probably use anyway. Even an affordable one like my FastTrack USB has yet another trim/gain knob, as well as mix/playback control.
One last thing you can try is go into
Start->All Programs->Accessories->Entertainment->Volume Control (or w/e equivalent path you have to the program)
Options -> Properties -> Recording -> OK
Sometimes your microphone level will have the option to "Boost Mic". Check that and see if it helps.
If all this doesn't help, my biggest guess is that you are lacking a trim/gain function in that recording chain, and/or Soundblaster is unable to boost the signal enough to be recorded.
I've had both reasons happen to me to cause the same issue, so it's either or both.
