I know SX3 has it's "score" mode. I've never used and probably never will. It seams logical to me that if it can convert to musical notation, it should be able to do the opposite.
I'd look into it more. Cubase SX3 is extremely well thought out. It's clear they've been building recording software for over 20 years. There are times when I say "I wish it had this!" just to find out that it can do it.
I'd take a day and just research the features that SX3 has. It will probably do everything.
