If you want to do drums then i wouldnt settle for anything less than 4 simultaneous inputs for recording. Im not saying you can not get a good drum sound with less but it is more difficult to control the sound of the drum set itself. Right now just audacity with a one mic running directly into the soundcards line in. I am a drummer actually and I've recorded at my friends with a mic overhead and one mic at the bass drum, but i kno normally drums are mic'd with 4.
But I also have freestylers come over my house and record to an instrumental track that I just throw onto audacity. I would be recording their vox with just one mic.(just made a sampler of it
