Yes. You will be able to set each input as a separate track on cubase.
Disclaimer - Most audio interfaces send a separate signal to the computer for each input, but certain interfaces, especially usb mixers, do not.
They only send a mixed 2 channel stereo signal of all the inputs to the computer.
Read the product manuals on their website carefully and contact the manufacturer if you're not sure.
