Depends on your source. Cymbals are often recorded using a pair of mics called overheads. It captures things other than just the cymbals for obvious reasons.

I'm not really understanding why panning the overheads opposite isn't working for you unless you have phasing issues in the recording. Try flipping the phase on the overheads.
