You don't need to know - that's the whole point of the learn function. You press the learn button, twiddle a knob, and it assigns automatically.
The manual for your keyboard should have instructions on how to change the cc's sent by each knob.
The manuals for your VSTi's should tell you what controllers are readily available for use with your keyboard controller.
